In days gone by, there was a much shorter timeline between the milling of grains and their consumption. The shorter the time elapsed, the greater the nutritional profile maintained.

When flours and other grain products became mass-produced for stores across the country, shelf-stability became a driving factor. Nutrients were sifted out or lost over time sitting in warehouses or on shelves. Flours began being enriched with additional ingredients in an attempt to make up for the loss.

In contrast, freshly-milled grains retain their bran, germ, and natural oils. This creates a complex, nutty flavor and an impressive nutritional profile.  Fiber, vitamins, healthy fats, and antioxidants are at their highest potential. Digestion is aided, and inflammation is reduced. 

Although the best option is having your own mill at home feeding straight into your mixing bowl, we wanted to provide a way to make the benefits of freshly-milled grains available to a greater range of community members. 

All of our grains are milled within 1 day of passing from our hands to yours, getting you as close as possible to the original nutritional goodness packed within.
